Mom's Blueberry Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 16
  • 1/2 cup butter or 1/2 cup margarine
  • 1 cup sugar
  • 1 egg, separated
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1 1/2 cups blueberries

Recipe

  • 1 cream together the butter and sugar; add the egg yolk and beat well.
  • 2 sift flour, baking powder and salt.
  • 3 add alternately with milk to the creamed mixture.
  • 4 beat the egg until stiff; fold into the cake batter with the vanilla.
  • 5 add fresh blueberries and combine gently.
  • 6 pour into a greased 8" pan and bake at 350 for 45 minutes or until tester comes out clean.
