Frothy Mexi-mocha Coffee

Ingredients

  • Servings: 2
  • 1/2 cup lightly packed light brown sugar
  • 2 ounces semisweet chocolate, chopped
  • orange rind (2-inch x 1/4-inch strip)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 1/2 cup hot strong coffee
  • 1/4 cup warmed half-and-half
  • orange rind (to garnish)
  • cinnamon stick (to garnish)

Recipe

  • 1 combine sugar, chocolate, orange rind, cinnamon and allspice in blender. whirl until finely chopped.
  • 2 add coffee to blender. whirl for 1 to 2 minutes or until smooth and chocolate is melted, scraping down side if needed.
  • 3 pour into saucepan; gently heat.
  • 4 combine in blender with warmed half-and-half; whirl until frothy. strain; discard solids.
  • 5 serve in cappuccino cups. garnish with orange rind and cinnamon sticks, and chocolate covered coffee beans, if you wish.

Mom's Banana Bread Recipe!

Ingredients

  • 3/4 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 3 very ripened bananas (the blacker the better)
  • cooking spray
  • 1 teaspoon ish flour
  • 1 cup pecans (optional)

Recipe

  • 1 in a liquid mixing cup, pour 1 tsp of vinegar and enough milk to make 1/2 cup (be sure to put the vinegar in first and then add your milk).
  • 2 mix together dry ingredients: flour, salt and baking soda in a separate bowl (sift, if desired).
  • 3 in your blender, mix together vanilla and 3 bananas until they are soup like in texture.
  • 4 cream together shortening and sugar in your mixing bowl.
  • 5 add 2 eggs to creamed shortening and sugar mixture. mix well.
  • 6 slowly add dry ingredients and sour milk mixture. be sure to alternate between the two.
  • 7 slowly add in the souplike banana mixture and pecans (if desired).
  • 8 spray bundt pan with cooking spray and flour (i usually use about 1 tsp of flour, but it depends on your pan, how coated you want it, etc.).
  • 9 bake at 350 for 1 hour. check for doneness by inserting a toothpick. if it comes out clean, it's finished. if not, put back into the oven for 5 minutes and keep going that way until your toothpick comes out clean.
  • 10 invert cake and allow to cool for 10-20 minutes.

  • 1 cup sunflower seeds, raw
  • 1 cup almonds, raw
  • 1/2 cup flax seed

  • 4 spread onto teflex or parchment paper thinly, and place into food dehydrator. dry for a few hours until dry on top, then flip, remove teflex/parchment, and allow to dry until crispy. (this took another 12 hours).

  • 3 tablespoons oil
  • 3/4 cup soymilk

  • 1/4 cup soymilk (additional)

  • 1 preheat oven to 350 degrees f.
  • 2 oil 6 large or 12 small muffin cups.
  • 3 mix flours, cornstarch, cocoa, baking powder, salt, baking soda and dark chocolate chips together in a large bowl.

Recipe

  • 1 preheat the oven to 350 degrees f. butter a 9-inch round cake pan.
  • 2 separate the biscuit dough into 8 biscuits. place 1 biscuit in the center of the pan. cut the remaining biscuits in half, forming 14 half-circles. arrange the pieces around the center biscuit with cut sides facing in the same direction. brush melted butter over the tops of the biscuits.

  • 4 lbs first cut briskets of beef
  • 3 garlic cloves, slivered
  • 3 garlic cloves, crushed
  • 4 large onions, thinly sliced
  • 1 cup apple cider vinegar
  • 1 1/2 tablespoons bacon fat
  • 1 cup strong black coffee
  • salt & pepper
  • 1/2 cup water

Recipe

  • 1 with a long thin, sharp knife, make slits in the meat and insert the slivers of garlic.
  • 2 place the meat in a bowl, spread 1 sliced onion and the crushed garlic over the meat, and pour in the vinegar.
  • 3 marinate for 6 hours at room temperature or overnight in the refrigerator, turning several times.
  • 4 when ready to cook, preheat the oven to 350 degrees f.
  • 5 heat the bacon fat in a deep, heavy skillet large enough to hold the brisket.
  • 6 remove the brisket from the marinade and discard the onion and vinegar.
  • 7 dry with paper towels.
  • 8 brown the meat well on all sides.
  • 9 remove brisket to a platter.
  • 10 in the fat remaining in the skillet, saute the remaining sliced onions until deeply browned.

  • 6 ounces mascarpone cheese
  • 2/3 cup whipping cream

  • 1 place the mascarpone cheese in a large bowl and set aside. with an electric mixer, beat the cream and 1/4 cup of the sugar in a medium bowl until soft peaks form.

  • 12 unwrap the plastic from atop the tiramisu. invert the tiramisu onto a platter.
  • 13 remove the plastic. sift the cocoa over the tiramisu, and with a vegetable peeler or sharp knife, make dark chocolate shavings and sprinkle over top.
  • 14 for the chocolate zabaglione: add cream and chocolate to a heavy small saucepan.
  • 15 cook over medium heat, stirring often, until the chocolate chips are melted and smooth.
  • 16 set aside and keep warm.
  • 17 whisk the egg yolks, sugar, marsala, and salt in a large glass bowl until blended.
  • 18 set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water.

Healthy Whole Wheat Muffins

  • 1 cup self rising flour (heaping)
  • 1 cup king arthurs whole wheat flour (heaping)
  • 1/4 cup brown sugar
  • 1/2 cup flax seed
  • 1 carrot (large)
  • 1 apple
  • 1 cup canola oil (olive oil works too)
  • 2 tablespoons molasses (or honey)
  • 1 cup skim milk

Recipe

  • 1 -preheat oven to 450.
  • 2 -mix flours, flax, and brown sugar together (to be really healthy, grind half of flax seed in coffee grinder.
  • 3 -finely grate carrot, grate apple, and mix in with dry mixture.
  • 4 -mix in oil and molasses (you can substitute honey for molasses).
  • 5 -add milk until you get a thick, but wet dough. may use less or more than a cup.
  • 6 -spray muffin tin and drop dough into tin.
  • 7 -i like to sprinkle some extra flax seed on the top of each muffin to get them toasted and crunchy.
  • 8 -put in oven and bake for about 20 minutes or until brown on top.

  • 1/3 cup good cocoa
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup boiling water
  • 1/2 cup plain nonfat yogurt
  • 1 1/2 tablespoons light olive oil
  • 1 1/2 tablespoons corn syrup
  • 1 1/2 tablespoons unsweetened applesauce
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon grated orange zest (optional)
  • 3/4 cup unsifted cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 2 large egg whites, at room temperature
  • 2 tablespoons granulated sugar
  • 1 cup yogurt cheese
  • 1/4 cup 1% light soymilk or 1/4 cup skim milk
  • 1 cup frozen orange juice concentrate

  • 1 to prepare the cake:.
  • 2 preheat the oven to 350 degrees f [180 degrees c]. make sure the egg whites are at room temperature before beginning the recipe.
  • 3 spray an 8-inch [20-cm] round cake pan with cooking spray. cut a round of parchment or waxed paper to fit the bottom of the pan. smooth the paper into the pan, spray with cooking spray, and coat the bottom and sides with flour. set aside.
  • 4 combine the cocoa and brown sugar in a small bowl. pour in the boiling water and stir until smooth. set aside to cool.

  • 8 stir a large spoonful of beaten egg whites into the batter to lighten it. gently fold in the rest of the egg whites in two steps.
  • 9 pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick or cake tester inserted in the center comes out clean. cool on a rack for twenty minutes, then tip out of the pan onto another rack to cool completely. the cake will fall slightly as it cools. this cake is best served the same day it is baked, but if you allow it to cool completely and then wrap it carefully, it will be find the next day.
  • 10 to prepare the sauce:.
  • 11 yogurt cheese: place 1 1/2 cups yogurt in a strainer lined with a coffee filter, muslin or paper towel. place the strainer over a bowl. refrigerate overnight. the liquid will drain from the yogurt and you will be left with a creamy cheese mixture.
  • 12 in a medium bowl, whisk together the yogurt cheese, milk, orange juice concentrate, syrup, orange zest and lemon juice. keep whisking until the sauce is perfectly smooth. this sauce can be made ahead and refrigerated.
  • 13 to serve: cut the cake into eight wedges. place a wedge on each dessert plate and top with a spoonful of sauce. lay a few orange segments and a sprig of mint on the side. [leftover cake will keep for a few days if wrapped in plastic.

My Mom's Homemade Yogurt

Ingredients

  • 2 liters milk
  • 1 tablespoon unflavored gelatin
  • 6 ounces plain yogurt
  • 2 (5 g) yogurt starter

Recipe

  • 1 pour 1/2 cup of milk in a small measuring cup. sprinkle the gelatin. stir just a little bit. set aside.
  • 2 pour the remaining milk in a large saucepan. heat at medium heat, always stirring, until milk is 180f (you can use a candy thermometer).
  • 3 when the milk is 180f, remove from the heat. take some of the hot milk and add it to the mixture of milk and gelatin. stir well. put this mixture in the saucepan with the milk. stir.
  • 4 allow the milk to cool to lukewarm-110°f to speed up the process you can place the pan in cold water. when the milk is 100f, you can remove it from the water.

Chicken Paprika In Yogurt Sauce

  • 2 add as many chicken pieces that will fit without crowding. sauté until browned on both sides, about 8 minutes. remove to a paper towels to drain and repeat with remaining pieces.
  • 3 reduce heat to low and add onions, carrots, and celery. cook, stirring occasionally, until the onions turn clear, about 10 minutes.
  • 4 add stock or water and chicken pieces. sprinkle with paprika and salt. bring liquid to a boil, reduce heat, and cover. simmer until juices run clear when thigh is pierced with a fork, about 30 minutes.
  • 5 line a colander(or strainer) with a paper towel or coffee filter. place in a container so liquid can drip through. pour yogurt into strainer and let drain. if using sour cream, skip this step.

  • 1 cream together butter, sugar, & egg yolks until creamy.
  • 2 sift dry ingredients together (flour, baking soda, salt, cinnamon & nutmeg). alternately add the dry mixture to the creamed butter mixture as well as the milk & mashed bananas. beat the egg whites until a stiff peak forms and fold in with a wooden spoon, (make sure you only use a wooden spoon to do this - this is key), next - fold in the chopped nuts also stir in with the wooden spoon.
  • 3 bake in a loaf pan that you have sprayed with olive oil or non-stick spray and dusted lightly with flour at 350° for approximately 45 minutes - insert a toothpick in the center of the loaf to ensure it is not runny, if it is - allow to bake an additional 5-10 minutes.
  • 4 cool on a wire rack and serve with cream cheese or your favorite margarine.

  • 1 prepare the cake according to the package directions for a 9x13-inch cake. cool thoroughly.
  • 2 prick the entire top of the cake with a fork. pour coffee liqueur over the cake and allow it to soak inches wrap the cake with plastic and refrigerate for at least 3 hours. slice the cake into 1-inch thick pieces.
  • 3 line the bottom of a large glass bowl with a single layer of cake. pour 1/4 of the fudge sauce over the cake, top with ¼ of the candy bar-bits then 1/3 of the whipped cream. repeat layering 2 more times ending with fudge sauce and candy bits. refrigerate until ready to serve.

Deep Freeze Latte

  • 10 ounces coffee
  • 4 ounces milk
  • dry sweetener (optional)
  • liquid sweetener (optional)

Recipe

  • 1 freeze the coffee in an ice cube tray. use shaped ice trays to improve the presentation of the coffee cubes.
  • 2 to serve, heat the milk using your preferred method.
  • 3 if you're using a dry sweetener like sugar, you'll need to add it in to the milk while it's hot.
  • 4 fill a tall glass with coffee cubes. do not allow the cubes to overshoot the rim of the glass.
  • 5 pour the hot milk into the glass of coffee cubes.
  • 6 if you're using a liquid sweetener, like honey or syrup, you can add it now.
  • 7 stir and enjoy as the coffee cubes melt and the latte gets increasingly cold.
  • 8 play around with the proportions of coffee cubes to milk, according to your preference.
  • 9 safety reminder: when pouring hot liquid into a glass, put a metal spoon (or anything metal) in the glass to absorb the heat of the liquid and prevent damage to the glass.

Orange Coffee Liqueur

  • 1 large orange
  • 44 coffee beans
  • 44 sugar cubes or 12 tablespoons granulated sugar
  • 1 quart vodka

Recipe

  • 1 wash and dry the orange thoroughly.
  • 2 using the sharp end of a paring knife, prick the skin of the orange all over.
  • 3 insert the 44 coffee beans into the orange.
  • 4 place the orange in a 1 1/2 quart canning jar.
  • 5 add the sugar cubes and vodka.
  • 6 close the lid making sure the cover is tight.
  • 7 turn the jar upside down.
  • 8 shake for at least a minute or two to help dissolve the sugar.
  • 9 store in a cool, dry spot away from the heat and moisture of a kitchen.
  • 10 each day, shake the jar until the sugar is totally dissolved.
  • 11 allow to set for the entire 44 days until the vodka turns to a pale lovely orange color and has a coffee-orange fragrance.
  • 12 to use, remove the orange and coffee beans. strain the liquid through a fine-meshed sieve into pretty clear bottles or a clear glass decanter.
  • 13 serve in small liqueur glasses at room temperature or slightly chilled. you can also add it to wine. makes a nice accompaniment to winter fruit or fruit compotes or alone as an after-dinner drink.

Fennel Spice Chips

  • 2 (6 ounce) bags plain potato chips
  • 1 cup fennel seed
  • 3 tablespoons coriander seeds
  • 2 tablespoons peppercorns
  • 3 tablespoons kosher salt

  • 1 preheat oven to 350*f. place the chips on a cookie sheet and put them in oven for 4 to 6 minutes.
  • 2 when oil is visible on the chips and they start to get shiny, take them out of the oven, and sprinkle with a generous amount of the spice rub. let them cool and serve.
  • 3 to make fennel spice rub:
  • 4 place the fennel seeds, coriander seeds, and peppercorns in a heavy skillet over medium heat. watch carefully, tossing frequently so the seeds will toast evenly. when light brown and fragrant, pour the seeds onto a plate to cool. they must be cool before grinding, or they will gum up the blades.
  • 5 pour the seeds into a blender(i use a small coffee grinder) and add the salt. blend to a fine powder, shaking the blender occasionally to redistribute the seeds. store in a tightly sealed glass jar in a cool, dry place, or freeze.

  • 2 add the flour by hand alternating with the milk, beginning and ending with the flour. after each addition stir only enough to combine. spread the batter evenly into dish and bake for 55 to 60 minute.

  • 15 chocolate wafer cookies
  • 15 ounces part-skim ricotta cheese

  • 3/4 cup skim milk

  • 1 grease 8 inch springform pan with cooking spray. crush all but 2 cookies; sprinkle 1 tablespoon crumbs over pan bottom. in food processor, blend cheese, cocoa and dash salt. in saucepan, combine sugar, gelatin and coffee; soak 1 minute. heat over low heat until clear. off heat, stir in milk, extracts and cheese mixture. place pan in bowl of ice and water; stir until thickened. fold in all but 1/2 cup topping; pour into loaf pan. cover; chill at least 4 hours.

  • 1 position oven rack one-third up from bottom. preheat oven to 325°f grease an 8-inch square baking pan.

  • 1 in a medium sauce pan, mix together the first 9 ingredients.
  • 2 simmer on medium for 1 hour.
  • 3 stir together corn starch and water and add to the still simmering bourbon sauce.
  • 4 leave on medium heat which preparing chicken.
  • 5 cut chicken into 3/4-inch cubes.
  • 6 season with salt and pepper liberally.
  • 7 heat a large, heavy bottomed, saute pan on high that has been sprayed with cooking spray.
  • 8 when it is smoking add chicken.
  • 9 brown chicken on both sides and then add bourbon sauce.
  • 10 let simmer for 2 minutes and serve.

Pear & Banana Bunny Rabbit Treats For Bunnies/rabbits

  • 1 pear, ripe and soft (can be steamed if not soft)
  • 1 banana, ripe, broken into pieces
  • 1 tablespoon honey
  • 1/3 cup rabbit pellets, ground finely
  • 1/3 cup old fashioned oats, ground finely
  • 2/3 cup cheerios toasted oat cereal (the plain oat ones)

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 mash together pear and bananas with honey until smooth.
  • 3 grind pellets, oats, and cheerios using a coffee grinder (use a grinder only used to make rabbit treats). mix in with pear/banana mixture until well blended together and allow to cool if you've steamed the pears.
  • 4 place the dough on either a piece of parchment paper or a silpat (silicone baking) mat. whichever you use, place it on a baking sheet for stability.
  • 5 place a piece of plastic wrap over the dough and roll out until it's about 1/4 inch thick.
  • 6 some folks use a cookie cutter for the next step, but i just score the rolled-out dough with a large knife in any pattern i want. be very careful you're not cutting the material beneath the dough (either the paper or the silpat). you only need to score the dough, not cut all the way through. when they're done, they'll easily break apart.
  • 7 cook for 30 minutes or until brown on bottom. check at 20 minutes. my guy doesn't like them overdone.
  • 8 let cool - for a crunchier treat, turn off the oven, leaving the sheet in until it cools.
  • 9 once cooled, place in sealed container or bag and refrigerate or freeze. i usually keep a weeks' worth in the refrigerator and the rest are divided into weekly portions and go into vacuum-packed bags in the freezer.
