Sweet Vanilla Cherry Cake

Ingredients

  • Servings: 1
  • 1 (21 ounce) can lucky leaf® regular or premium cherry pie filling
  • 3 eggs, beaten
  • 1 cup sugar
  • 3/4 cup cooking oil
  • 1 3/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon vanilla
  • dash of salt
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon

Recipe

  • preheat oven to 350 degrees f.
  • beat together eggs, sugar, oil, flour, baking powder, vanilla and salt. spread 2/3 of the batter into a greased 13x9-inch baking pan.
  • spread lucky leaf cherry pie filling on top of batter. drop the remaining batter by spoonfuls on top of the pie filling layer.
  • stir together the sugar and the cinnamon. sprinkle over top of cake. bake for 40 minutes or until a toothpick inserted near the center comes out clean.
  • serve warm or cooled.

cranberry sauce

Ingredients

  • Servings: 8
  • 12 ounces cranberries
  • 1 cup white sugar
  • 1 cup orange juice

Recipe

  • in a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. stir in the cranberries and cook until the cranberries start to pop (about 10 minutes). remove from heat and place sauce in a bowl. cranberry sauce will thicken as it cools.

Grandma's Lemon Meringue Pie

Ingredients

  • Servings: 1
  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 2 lemons, juiced and zested
  • 2 tablespoons butter
  • 4 egg yolks, beaten
  • 1 (9 inch) pie crust, baked
  • 4 egg whites
  • 6 tablespoons white sugar

Recipe

    Preparation Time: 30 mins Cook Time: 10 mins Ready Time: 40 mins

  • preheat oven to 350 degrees f (175 degrees c).
  • to make lemon filling: in a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. stir in water, lemon juice and lemon zest. cook over medium-high heat, stirring frequently, until mixture comes to a boil. stir in butter. place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. whisk egg yolk mixture back into remaining sugar mixture. bring to a boil and continue to cook while stirring constantly until thick. remove from heat. pour filling into baked pastry shell.
  • to make meringue: in a large glass or metal bowl, whip egg whites until foamy. add sugar gradually, and continue to whip until stiff peaks form. spread meringue over pie, sealing the edges at the crust.
  • bake in preheated oven for 10 minutes, or until meringue is golden brown.

  • 3/4 cup packed brown sugar

  • 4 ounces ghirardelli milk chocolate baking bar, broken or chopped into 1-inch pieces
  • 1 tablespoon instant freeze-dried coffee
  • 1/4 cup boiling water
  • 2 cups heavy cream
  • 1 ounce ghirardelli 60% cacao bittersweet chocolate baking bar, for shavings

  • preheat the oven to 350 degrees f. grease two 8-inch or 9-inch round cake pans. line the bottoms with parchment paper and grease the parchment paper.
  • to make the torte, melt the bittersweet chocolate in the top of a double boiler or in a heatproof bowl over barely simmering water, stirring occasionally until smooth. set aside. dissolve the coffee in the boiling water; set aside.
  • in a large bowl, whip the egg whites with an electric mixer on medium speed until soft peaks form. gradually add 1/3 cup sugar, and increase the mixing speed to high and continue beating until stiff peaks form.

  • to assemble the torte, level the top of each layer by cutting off the raised edges with a long serrated knife. place one layer on a serving plate. spread the layer with 1 cup of the chocolate whipped cream. top with the remaining cake layer. frost the top and sides of the torte with the remaining frosting. sprinkle the top with bittersweet chocolate shavings.
