Cherry Cider Jelly

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 4 cups cherry cider, bottled
  • 7 cups sugar
  • 6 ounces liquid pectin, 2 3ounce pouches

Recipe

  • 1 strain cider, a coffee filter and sieve work well.
  • 2 in a large pan heat cider till warm using medium heat.
  • 3 add sugar and heat, stir constantly until sugar is dissolved.
  • 4 turn up to medium high heat,bring to a full rolling boil, stir constantly.
  • 5 stir in pectin.
  • 6 bring back to a full rolling boil,stir constantly for one minute.
  • 7 remove from heat.
  • 8 quickly skim off any foam and ladle hot jelly into hot jars, leave 1/4 inch headspace.
  • 9 wipe jar rims and threads with clean damp cloth.
  • 10 cover with hot lids and apply screw rings.
  • 11 process 1/2 pint jars in water bath for 10 minutes.
