Healthy Whole Wheat Muffins

Ingredients
- 1 cup self rising flour (heaping)
- 1 cup king arthurs whole wheat flour (heaping)
- 1/4 cup brown sugar
- 1/2 cup flax seed
- 1 carrot (large)
- 1 apple
- 1 cup canola oil (olive oil works too)
- 2 tablespoons molasses (or honey)
- 1 cup skim milk
Recipe
- 1 -preheat oven to 450.
- 2 -mix flours, flax, and brown sugar together (to be really healthy, grind half of flax seed in coffee grinder.
- 3 -finely grate carrot, grate apple, and mix in with dry mixture.
- 4 -mix in oil and molasses (you can substitute honey for molasses).
- 5 -add milk until you get a thick, but wet dough. may use less or more than a cup.
- 6 -spray muffin tin and drop dough into tin.
- 7 -i like to sprinkle some extra flax seed on the top of each muffin to get them toasted and crunchy.
- 8 -put in oven and bake for about 20 minutes or until brown on top.
- 9 -top with a little honey -- enjoy!
