Grandma Judge's Nut Roll

Total Time: 3 hrs Preparation Time: 2 hrs Cook Time: 1 hr

Ingredients

  • 1/2 cup warm water
  • 1/4 ounce yeast
  • 1 teaspoon sugar
  • 2 cups flour
  • 3 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1/2 cup butter
  • 3 egg yolks
  • 1 cup sour cream
  • 1 lb walnuts (ground fine)
  • 1/2 cup butter
  • 3/4 cup milk (scalded)
  • 2 tablespoons lemon zest (optional)
  • 3/4 cup sugar
  • 3 egg whites

Recipe

  • 1 in a small bowl, mix water with yeast & 1 tsp sugar. let stand until foamy.
  • 2 mix flour , sugar, and salt. cut in butter with pastry cutter (or 2 butter knives).
  • 3 mix egg yolks with sour cream and add to yeast mixture.
  • 4 make a well in flour mixture and add liquid mixture. knead until smooth.
  • 5 place dough in greased bowl and grease top of dough. let rise until double in size (1 1/2 hours).
  • 6 cut dough into 3. roll each into a rectangle.
  • 7 spread filling over dough and roll tightly.
  • 8 bake at 350 degrees for 1 hour.
  • 9 nut filling: mix first 5 ingredients together.
  • 10 beat egg whites and fold into nut mixture.
  • 11 fill roll.
  • 12 alterations: any pie filling or poppy seed filling can replace the nut filling.
  • 13 you can also refrigerate the dough overnight without first rising time and then cut into 3 pieces roll into rectangles then fill and roll. let dough rise for 1 hour if refrigerating.
