Flaxseed Muffins

Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 1/2 cup flax seed meal (flaxseeds ground in a coffee grinder)
- 1/2 cup quick oats
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 eggs or 1/2 cup egg substitute
- 1 cup low-fat buttermilk
- 4 tablespoons honey
- 2/3 cup raisins
Recipe
- 1 mix all dry ingredients (except the raisins) in a large bowl.
- 2 combine liquid ingredients in a separate bowl.
- 3 stir liquid ingredients into the dry ingredients all at once.
- 4 add raisins. stir until thoroughly moistened but lumpy.
- 5 fill muffin tins, lined with paper or foil cups, to about 2/3 full.
- 6 bake at 400°f for 15 to 20 minutes.
