Flaxseed Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1/2 cup flax seed meal (flaxseeds ground in a coffee grinder)
  • 1/2 cup quick oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs or 1/2 cup egg substitute
  • 1 cup low-fat buttermilk
  • 4 tablespoons honey
  • 2/3 cup raisins

Recipe

  • 1 mix all dry ingredients (except the raisins) in a large bowl.
  • 2 combine liquid ingredients in a separate bowl.
  • 3 stir liquid ingredients into the dry ingredients all at once.
  • 4 add raisins. stir until thoroughly moistened but lumpy.
  • 5 fill muffin tins, lined with paper or foil cups, to about 2/3 full.
  • 6 bake at 400°f for 15 to 20 minutes.
