Danish Quick Coffee Cake With Fresh Fruit - Galop Kaffekage

Ingredients

  • 1 cup blueberries
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon clove
  • 1/2 teaspoon nutmeg
  • 1/2 cup soft butter
  • 1 cup sugar
  • 3 eggs
  • 1/3 cup milk
  • 1 1/2 teaspoons vanilla

Recipe

  • 1 rinse and drain the berries.
  • 2 remove the stems, set aside.
  • 3 sift the flour, baking powder, salt and spices together.
  • 4 in a separate bowl work the butter until soft and creamy. add the sugar gradually, blending well. beat the eggs into the mixture and continue to beat until light and fluffy.
  • 5 stir in the dry ingredients and the milk alternately, a little at a time, beating well after each addition.
  • 6 add vanilla.
  • 7 fold in fruit.
  • 8 pour batter into a greased loaf pan (9×5×3) and bake in a preheated 350º oven for 1 hour.
