Caramel Coffee Cream Parfaits

Ingredients

• Servings: 4
• 1/2 lb caramel
• 1 cup whipping cream
• 4 cups coffee ice cream, softened
• 1/2 cup finely chopped pecans

Recipe

• 1 in top of double boiler over hot water, place caramel and whipping cream.
• 2 stir until caramels are melted and sauce is smooth.
• 3 layer sauce and ice cream in 4 parfait glasses, beginning and ending with sauce.
• 4 top each parfait with chopped pecans.
