Kona Coffee Cup Muffins

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 9
  • 1/4 cup margarine
  • 1/2 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1/4 cup strong coffee (kona coffee)
  • 3 tablespoons jam, divided (any flavor)

Recipe

  • 1 blend margarine, sugar, and eggs until creamy.
  • 2 add sifted flour and baking powder alternating with milk and cofee.
  • 3 blend well after each addition.
  • 4 spray 9"fire-king" coffee cups with non stick pray or grease with butter.
  • 5 fill 1/2 full with batter.
  • 6 drop 1 teaspoon jam in center of each and add more batter to each cup, covering jam.
  • 7 bake in 350-degree oven for 30 minutes.
  • 8 serve cup with saucer.
