Kona Coffee Cup Muffins

Ingredients
- Servings: 9
- 1/4 cup margarine
- 1/2 cup sugar
- 2 eggs
- 2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 cup milk
- 1/4 cup strong coffee (kona coffee)
- 3 tablespoons jam, divided (any flavor)
Recipe
- 1 blend margarine, sugar, and eggs until creamy.
- 2 add sifted flour and baking powder alternating with milk and cofee.
- 3 blend well after each addition.
- 4 spray 9"fire-king" coffee cups with non stick pray or grease with butter.
- 5 fill 1/2 full with batter.
- 6 drop 1 teaspoon jam in center of each and add more batter to each cup, covering jam.
- 7 bake in 350-degree oven for 30 minutes.
- 8 serve cup with saucer.
