Mini Espresso-amaretto Granitas

Ingredients

- 1/3 cup water
- 1/4 cup sugar
- 1 1/2 cups strong brewed espresso coffee, cooled
- 1 teaspoon amaretto or 1/4 teaspoon almond extract
Recipe
- 1 combine water and sugar in a medium saucepan. cook, stirring, over medium heat until sugar is dissolved. remove from heat source; cool for 30 minutes. stir in espresso and amaretto and pour into a 1-quart freezer-proof container.
- 2 freeze, uncovered, for 2 hours, stirring and scraping sides every 20 minutes or so. cover and freeze, without stirring for 4 hours or until firm.
- 3 let stand at room temperature for 5- 10 minutes before serving. to serve, scrape with a spoon into chilled cordial glasses or large shot glasses.
