Kolombyntjes (currant Coffee Cake)

Ingredients

- 8 ounces butter
- 2 cups sugar
- 5 eggs
- 1 1/2 cups flour
- 2 teaspoons cream of tartar
- 1 pinch salt
- 1 tablespoon milk
- 1 teaspoon baking soda
- 6 ounces currants
- 1 teaspoon lemon juice
Recipe
- 1 cream together butter and sugar, then add the beaten eggs, flour, cream of tartar and salt.
- 2 dissolve the baking soda in the milk and beat this into the batter.
- 3 finally add the lemon juice and currants.
- 4 pour into a greased pan and bake at 325 degrees for about 20 - 30 minutes.
