Kolombyntjes (currant Coffee Cake)

Ingredients

  • Servings: 12
  • 8 ounces butter
  • 2 cups sugar
  • 5 eggs
  • 1 1/2 cups flour
  • 2 teaspoons cream of tartar
  • 1 pinch salt
  • 1 tablespoon milk
  • 1 teaspoon baking soda
  • 6 ounces currants
  • 1 teaspoon lemon juice

Recipe

  • 1 cream together butter and sugar, then add the beaten eggs, flour, cream of tartar and salt.
  • 2 dissolve the baking soda in the milk and beat this into the batter.
  • 3 finally add the lemon juice and currants.
  • 4 pour into a greased pan and bake at 325 degrees for about 20 - 30 minutes.
