Dreamsicle Fudge

Ingredients
- 3 cups sugar, divided
- 1/4 cup boiling water
- 1 cup liquid non-dairy coffee creamer
- 1/4 teaspoon salt
- 2 teaspoons orange zest
- 1 cup chopped almonds
Recipe
- 1 grease an 8 x 8 inch square pan.
- 2 in a heavy saucepan over medium heat melt 1 cup of sugar, stirring constantly.
- 3 carefully add boiling water.
- 4 stir in remaining 2 cups of sugar, non-dairy creamer and salt.
- 5 stirring constantly, bring mixture to a boil.
- 6 without stirring, heat to 242 to 248 degrees f (116 to 120 degrees c), or until a small amount of syrup dropped into cold water forms a firm but pliable ball.
- 7 remove from heat and cool to room temperature.
- 8 beat mixture until it loses gloss.
- 9 immediately fold in grated orange peel and nuts and transfer to prepared pan.
- 10 chill for 2 hours, or until firm, before cutting.
