Flourless Chocolate Cake

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 250 g chocolate
  • 1/2 cup unsalted butter
  • 1/4 cup extra finely granulated sugar
  • 3/4 cup almond meal, densely packed
  • 5 eggs, separated

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease a 8 inch round tin.
  • 3 melt butter in a double boiler.
  • 4 when butter is half done melting, add the sugar.
  • 5 when the butter is completely done, add the chocolate. (strictly speaking, you could add the butter, sugar and chocolate at the same time, but i find this easier).
  • 6 all while you are melting things, stir frequently.
  • 7 just as the chocolate and the butter are completely melted, remove from double boiler.
  • 8 mix in egg yolks, one by one.
  • 9 mix in almond meal.
  • 10 whip egg whites until stiff peaks form.
  • 11 gently fold egg whites into mixture.
  • 12 pour mixture into prepared tin.
  • 13 bake for fifty minutes.
  • 14 the cake may look rather brown, but that's perfectly fine. i serve mine in the tin, dusted with sugar for decoration.
