Mud Cake

Ingredients

• 1 1/4 cups flour
• 3/4 cup cocoa
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup chocolate chips (optional)
• 1 cup melted unsalted butter
• 1 teaspoon vanilla
• 1 teaspoon instant coffee powder
• 2 cups caster sugar
• 4 extra-large eggs
• 100 ml sour cream
• 1/4 cup milk (scant)

Recipe

• 1 melt butter and coffee together, stir in cocoa
• 2 then sugar, vanilla, eggs, sour cream and blend well.
• 3 sift dry ingredients and add to wet mix alternatively with milk and if using choc chips.
• 4 bake 175 degrees celcius 35-45 minutes.
• 5 ice with chocolate icing.
• 6 11/2 c icing sugar.
• 7 2t cocoa.
• 8 1 t butter.
• 9 1t vanilla.
• 10 hot water to make right texture.
