Mocha Nut Cookies

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 12 ounces dark chocolate or 12 ounces semisweet chocolate, coarsely chopped
  • 1/2 cup butter, cut up
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans, coarsely chopped
  • 1 1/2 cups hazelnuts, coarsely chopped
  • 1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips

Recipe

  • 1 preheat the oven to 325 f.
  • 2 prepared baking sheet with parchment paper.
  • 3 mix the flour, baking powder, and salt in a large bowl.
  • 4 melt the chocolate and butter in a double boiler over barely simmering water.
  • 5 beat the eggs and sugar in a large bowl with an electric mixer at high speed until pale and thick.
  • 6 beat in the chocolate mixture, coffee granules, and vanilla.
  • 7 mix the dry ingredients, pecans, hazelnuts, and chocolate chips
  • 8 drop tbs of the dough 3 inches apart onto the cookie sheet.
  • 9 bake until lightly cracked on top 20-25 min.
  • 10 transfer to racks to cool.
