Mocha Nut Cookies

Ingredients
- 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 12 ounces dark chocolate or 12 ounces semisweet chocolate, coarsely chopped
- 1/2 cup butter, cut up
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon instant coffee granules
- 1 teaspoon vanilla extract
- 1 1/2 cups pecans, coarsely chopped
- 1 1/2 cups hazelnuts, coarsely chopped
- 1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips
Recipe
- 1 preheat the oven to 325 f.
- 2 prepared baking sheet with parchment paper.
- 3 mix the flour, baking powder, and salt in a large bowl.
- 4 melt the chocolate and butter in a double boiler over barely simmering water.
- 5 beat the eggs and sugar in a large bowl with an electric mixer at high speed until pale and thick.
- 6 beat in the chocolate mixture, coffee granules, and vanilla.
- 7 mix the dry ingredients, pecans, hazelnuts, and chocolate chips
- 8 drop tbs of the dough 3 inches apart onto the cookie sheet.
- 9 bake until lightly cracked on top 20-25 min.
- 10 transfer to racks to cool.
