Mocha Macaroons

Ingredients
- 3 egg whites
- 1 teaspoon instant coffee granules
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1/2 cup sugar
- 2 tablespoons baking cocoa
- 2 cups flaked coconut
Recipe
- 1 heat oven to 300 degrees. lightly grease cookie sheets.
- 2 beat egg whites, coffee, cream of tartar, and salt in medium bowl on low speed until foamy.
- 3 beat in sugar, 1 tablespoon at a time on high speed until stiff. do not underbeat.
- 4 stir in cocoa until smooth.
- 5 fold in coconut.
- 6 drop mixture by rounded teaspoonfuls 1 inch apart on cookie sheet. bake 20 to 25 minutes or until set. cool 10 minutes, then remove from cookie sheet.
- 7 sprinkle with cocoa or drizzle with melted chocolate.
