- 3/4 cup all-purpose flour
- 1/2 cup unsweetened dutch-processed cocoa powder, sifted
- 1 tablespoon coffee, finely ground
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 pinch salt
- 3/4 cup granulated sugar
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup 2% low-fat milk
- 2 tablespoons instant coffee granules
- 1 teaspoon vanilla
Recipe
- 1 preheat your oven to 350 degrees and line your pan with paper liners.
- 2 mix together flour, cocoa powder, ground coffee, baking powder, baking soda and salt in a small bowl.
- 3 in a large bowl, whisk together sugar, oil and egg until smooth. add flour mixture and beat until combined.
- 4 in a small bowl whisk together milk, instant coffee and vanilla until coffee is dissolved.
- 5 add milk mixture to batter and beat until smooth.
- 6 pour or scoop batter into pan and bake 20-25 minutes or until a toothpick inserted in cupcake’s center comes out clean. cool in pan 10 minutes then remove and cool completely.
