Mocha Oatmeal Cake

Total Time: 1 hr 15 mins Preparation Time: 25 mins Cook Time: 50 mins

Ingredients

  • 2 tablespoons instant coffee
  • 1 1/3 cups boiling water
  • 1 cup rolled oats
  • 1/2 cup butter, soft
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons cocoa
  • 3 tablespoons butter, soft
  • 2 cups confectioners' sugar, sifted
  • 1 dash salt
  • 1 teaspoon tsps vanilla extract
  • 2 tablespoons coffee, reserved

Recipe

  • 1 reheat oven to 350.
  • 2 mix coffee and water. reserve 2 tablespoons for icing.
  • 3 pour over oats and stir.
  • 4 cover and let stand for 20 minutes.
  • 5 beat butter until creamy and add sugars.
  • 6 beat till fluffy.
  • 7 add vanilla and eggs.
  • 8 add oat mixture and blend well.
  • 9 sift together flour, soda, salt and cocoa. add to other bowl.
  • 10 turn batter into silpat 9 inch equivalent pan (or grease & flour pan).
  • 11 bake 50-55 minutes.
  • 12 frosting:.
  • 13 cream butter and sugar. add salt, vanilla and coffee.
  • 14 beat until smooth.
  • 15 frost the cooled cake.
