Mocha Oatmeal Cake

Ingredients
- 2 tablespoons instant coffee
- 1 1/3 cups boiling water
- 1 cup rolled oats
- 1/2 cup butter, soft
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons cocoa
- 3 tablespoons butter, soft
- 2 cups confectioners' sugar, sifted
- 1 dash salt
- 1 teaspoon tsps vanilla extract
- 2 tablespoons coffee, reserved
Recipe
- 1 reheat oven to 350.
- 2 mix coffee and water. reserve 2 tablespoons for icing.
- 3 pour over oats and stir.
- 4 cover and let stand for 20 minutes.
- 5 beat butter until creamy and add sugars.
- 6 beat till fluffy.
- 7 add vanilla and eggs.
- 8 add oat mixture and blend well.
- 9 sift together flour, soda, salt and cocoa. add to other bowl.
- 10 turn batter into silpat 9 inch equivalent pan (or grease & flour pan).
- 11 bake 50-55 minutes.
- 12 frosting:.
- 13 cream butter and sugar. add salt, vanilla and coffee.
- 14 beat until smooth.
- 15 frost the cooled cake.
