Gingerbread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 16
  • 3/4 cup boiling water
  • 1/4 cup hot strong coffee
  • 1 cup butter, room temperature
  • 1 cup dark brown sugar
  • 2/3 cup molasses
  • 1/3 cup honey (or any mixture of molasses and honey)
  • 3 large eggs
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon lemon peel
  • 1 dash salt
  • powdered sugar (optional)

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 grease 9x13 pan (preferably glass).
  • 3 pour boiling water/coffee over butter, sugar, molasses, and honey.
  • 4 stir until butter is melted.
  • 5 add eggs, beat well.
  • 6 mix dry ingredients.
  • 7 add dry to wet and mix until just combined.
  • 8 pour into pan and bake 1 hour.
  • 9 sprinkle top with powdered sugar (optional).
