Gingerbread

Ingredients

- 3/4 cup boiling water
- 1/4 cup hot strong coffee
- 1 cup butter, room temperature
- 1 cup dark brown sugar
- 2/3 cup molasses
- 1/3 cup honey (or any mixture of molasses and honey)
- 3 large eggs
- 2 1/2 cups flour
- 1 1/2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1 1/2 teaspoons ground ginger
- 3/4 teaspoon nutmeg
- 1/2 teaspoon lemon peel
- 1 dash salt
- powdered sugar (optional)
Recipe
- 1 preheat oven to 325 degrees.
- 2 grease 9x13 pan (preferably glass).
- 3 pour boiling water/coffee over butter, sugar, molasses, and honey.
- 4 stir until butter is melted.
- 5 add eggs, beat well.
- 6 mix dry ingredients.
- 7 add dry to wet and mix until just combined.
- 8 pour into pan and bake 1 hour.
- 9 sprinkle top with powdered sugar (optional).
