Healthy Amish Baked Oatmeal

Ingredients
- 2 cups uncooked thick cut oats
- 1/2 cup brown sugar (or 1/4 cup)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/3 cup raisins
- 1 tablespoon chopped walnuts
- 1 teaspoon baking powder
- 1 1/2 cups fat-free milk
- 1/2 cup applesauce
- 2 tablespoons butter
- 1 large egg, beaten
- cooking spray
Recipe
- 1 prepare and refrigerate overnight (nuts are optional).
- 2 combine first 7 ingredients in a medium bowl.
- 3 combine the milk, applesauce, butter and egg.
- 4 add milk mixture to the oat mixture: stir well.
- 5 pour into an 8 inch square baking dish coated with cooking spray.
- 6 add more milk, approximately 1/2 cup in the morning. bake at 375*.
- 7 for 60 minutes. serve warm.
- 8 5- 2/3cup servings.
