Neddy's Date Cake

Ingredients

• 1 cup chopped dates
• 1 teaspoon baking soda
• 1 cup boiling water
• 1 tablespoon butter
• 1/2-3/4 cup sugar
• 1 1/2 cups sifted self-raising flour
• 1 beaten egg
• 1/2 cup chopped walnuts

Recipe

• 1 sprinkle the dates with the baking soda, pour over the water and cool.
• 2 cream the butter and sugar together.
• 3 add the egg, then the coated date mixture, alternating with the sifted flour.
• 4 add the walnuts.
• 5 bake in a log tin for 3/4 hour at about 425°f.
