Microwave Orange Coffee Crumb Cake

Ingredients

• 2 cups flour
• 1 cup sugar
• 1/2 cup butter
• 2 teaspoons cinnamon
• 2 teaspoons baking powder
• 2 eggs
• 1 cup orange juice

Recipe

• 1 blend flour, sugar and butter until cornmeal consistency.
• 2 combine 1 cup of crumb mixture with cinnamon; reserve for topping.
• 3 add baking powder to remaining mixture; blend well.
• 4 beat eggs with orange juice.
• 5 mix lightly into crumb mixture.
• 6 pour into lightly greased 9" square microwave-safe baking dish.
• 7 sprinkle top with cinnamon crumbs.
• 8 microwave on high for 8 minutes, rotating half way during cooking.
