Country Ham With Redeye Gravy

Ingredients

- 2 slices uncooked country ham (1/4-inch-thick)
- 2 tablespoons vegetable oil
- 1 cup strong black coffee
- 2 tablespoons all-purpose flour
- 1/2 teaspoon paprika
Recipe
- 1 cut gashes in fat to keep ham from curling.
- 2 saute ham in oil in a heavy skillet over low heat 3 to 4 minutes on each side.
- 3 remove the ham from skillet, and keep warm.
- 4 combine coffee and flour; add to pan drippings, stirring constantly, until thickened.
- 5 add paprika.
- 6 serve with ham.
