Country Ham With Redeye Gravy

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 slices uncooked country ham (1/4-inch-thick)
  • 2 tablespoons vegetable oil
  • 1 cup strong black coffee
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon paprika

Recipe

  • 1 cut gashes in fat to keep ham from curling.
  • 2 saute ham in oil in a heavy skillet over low heat 3 to 4 minutes on each side.
  • 3 remove the ham from skillet, and keep warm.
  • 4 combine coffee and flour; add to pan drippings, stirring constantly, until thickened.
  • 5 add paprika.
  • 6 serve with ham.
