Country Fried Ham With Red-eye Gravy

Ingredients

  • Servings: 4
  • 1/4 inch thick ham slices
  • milk
  • 1 cup strong black coffee
  • pepper

Recipe

  • 1 soak ham in milk overnight.
  • 2 the next morning, wipe ham with paper towels.
  • 3 put just enough ham fat into skillet to keep ham from sticking.
  • 4 have skillet hot, not too hot.
  • 5 slowly brown ham evenly on both sides.
  • 6 when done, remove to hot platter.
  • 7 for the gravy, add the coffee to ham drippings in skillet, sprinkle with a bit of pepper and let come to a boil.
  • 8 stir well and serve piping hot with biscuits.
