Lemon Blueberry Coffee Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 egg
  • 1/3 cup sugar
  • 1 teaspoon grated lemon, rind of
  • 2/3 cup milk
  • 2 1/4 cups biscuit mix
  • 1 cup blueberries
  • 3/4 cup confectioners' sugar
  • 4 teaspoons lemon juice

Recipe

  • 1 combine the egg, sugar, lemon peel and milk; mix well.
  • 2 sir in the biscuit mix just until moistened.
  • 3 fold in blueberries.
  • 4 pour into a greased 9-in round baking pan.
  • 5 bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  • 6 cool for 10 minutes before removing from pan to a wire rack.
  • 7 combine the confectioners' sugar and lemon juice until smooth; drizzle over the warm cake.
  • 8 cut into wedges to serve.
