Lemon Blueberry Coffee Cake

Ingredients

- 1 egg
- 1/3 cup sugar
- 1 teaspoon grated lemon, rind of
- 2/3 cup milk
- 2 1/4 cups biscuit mix
- 1 cup blueberries
- 3/4 cup confectioners' sugar
- 4 teaspoons lemon juice
Recipe
- 1 combine the egg, sugar, lemon peel and milk; mix well.
- 2 sir in the biscuit mix just until moistened.
- 3 fold in blueberries.
- 4 pour into a greased 9-in round baking pan.
- 5 bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.
- 6 cool for 10 minutes before removing from pan to a wire rack.
- 7 combine the confectioners' sugar and lemon juice until smooth; drizzle over the warm cake.
- 8 cut into wedges to serve.
