Old-fashioned Lamb Cake

Ingredients
- 1 pint black coffee, strong
- 1 lb fat lamb, fresh ground
- 1 lb walnuts, chopped
- 1 lb raisins
- 1 lb dates, cut up (optional)
- 1 medium orange, peeled (optional)
- 1 lb candied fruit (optional)
- 4 cups brown sugar
- 7 cups all-purpose flour
- 1 tablespoon baking soda
- 1 tablespoon baking powder
- 1 tablespoon ground cinnamon
- 1 tablespoon ground nutmeg
- 1 cup applesauce
- 1 cup citron
Recipe
- 1 grease and flour 2 bundt pans. preheat oven to 325 degrees.
- 2 put lamb and raisins in a large mixing bowl (6qt.+) and pour hot coffee over them; set aside allowing some time to cool.
- 3 sift together all measured dry ingredients; mix in walnuts.
- 4 stir lamb mixture carefully in case the coffee is still hot. slowly begin to add sifted dry ingredients with walnuts and combine together thoroughly.
- 5 mix in applesauce and citron.
- 6 pour into greased and floured bundt pans. bake for 1-1/2 to two hours or until done.
