Mexican Hot Fudge Sundae

Ingredients

- 3/4 cup heavy whipping cream
- 1/2 cup freshly brewed strong coffee
- 16 ounces semi-sweet chocolate chips
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla
- vanilla ice cream
- toasted pine nuts (optional)
- fresh mint leaves
Recipe
- 1 bring the cream and 1/2 cup of the coffee to a boil in a medium saucepan.
- 2 remove from heat.
- 3 add the chocolate and cinnamon.
- 4 stir until chocolate is melted and the sauce is smooth.
- 5 mix in vanilla.
- 6 scoop the ice cream into bowls and top with warm chocolate sauce, pine nuts and mint. enjoy!
