Java Rica

Total Time: 18 mins Preparation Time: 15 mins Cook Time: 3 mins

Ingredients

  • Servings: 6
  • 2 tablespoons gelatin powder (1/2 oz)
  • 4 tablespoons water
  • 2 tablespoons sugar
  • 1/3 cup strong black italian coffee (espresso or strong coffee with a little instant added)
  • 1/4 coffee liqueur
  • 1 1/4 cups heavy cream
  • crystallized violets (optional, or some other lovely garnish)

Recipe

  • 1 melt the gelatin in a bowl of water over a pan of simmering water.
  • 2 remove from heat.
  • 3 when cool and beginning to thicken, add sugar, coffee and liqueur.
  • 4 whisk the cream until soft.
  • 5 gradually add the coffee mixture to the cream.
  • 6 continue whisking until the cream is thick and beginning to set.
  • 7 pour into serving glasses and chill for 2-3 hours.
  • 8 just before serving decorate each with a crystallized violet or some other garnish.
