Healthy Vegan Brownies(fat Free)

Ingredients

  • 3/4 cup sugar
  • 3/4 cup unsweetened applesauce
  • 2 tablespoons water
  • 2 teaspoons ground flax seeds
  • 1/4 cup brewed coffee
  • 1/4 cup water
  • 2 teaspoons vanilla extract
  • 1 1/3 cups whole wheat flour
  • 3/4 cup cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup semisweet vegan chocolate chips
  • 1/2-1 cup coarsely chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Recipe

  • 1 preheat oven to 350 degrees f. grease an 8×8 inch baking pan.
  • 2 in a medium sized bowl, stir together the sugar, applesauce, and 2 tablespoons of water.
  • 3 in a small bowl or food processor, combine the ground flax seed with the 1/4 cup coffee and 1/4 cup water. add this to the applesauce mixture, along with the vanilla and stir to combine.
  • 4 in a separate small bowl, combine the flours, cocoa, baking powder, salt, chocolate chips, and nuts (if using). add to the applesauce mixture and stir to combine.
  • 5 pour into the prepared pan and bake for 20-28 minutes, depending on if you like your brownies moist or cakey. remove from the oven, add the icing on top, allow to cool, and then cut.
