Cranberry Coffee Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 10
  • 1 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon almond extract
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 (8 ounce) can whole berry cranberry sauce
  • 1/2 cup chopped almonds
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 with a mixer, using a large bowl, cream the butter.
  • 2 gradually add sugar. beat until light and fluffy.
  • 3 add eggs, one at a time, beating well after each addition.
  • 4 mix in almond extract.
  • 5 in a separate bowl, sift together the flour, baking powder and salt.
  • 6 alternate mixing in the flour mixture and sour cream until all blended together.
  • 7 pour batter into greased 9 x 13 cake pan. spoon cranberry sauce over batter. spread slightly but do not try to completely cover top of the batter.
  • 8 sprinkle with almonds.
  • 9 bake at 350 degrees for 35 to 40 minutes or until the cake pulls slightly away from the sides of the pan.
  • 10 meanwhile, blend the glaze ingredients.
  • 11 once the coffeecake is done, cool slightly and then drizzle the glaze over the top.
