Cranberry Coffee Cake

Ingredients

  • Servings: 12
  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup plain yogurt or 1 cup sour cream
  • 1 teaspoon almond extract
  • 1 (398 ml) can whole cranberry sauce, pureed
  • 1/2 cup walnuts, chopped
  • 3/4 cup icing sugar
  • 1 tablespoon hot water
  • 1/2 teaspoon almond extract

Recipe

  • 1 cream margarine, sugar and eggs.
  • 2 sift dry ingredients. mix alternately into creamed ingredients the dry ingredients and yogurt. add almond extract; beat well.
  • 3 spread 1/2 batter in well-greased tube pan. spread cranberry sauce on top. spread the rest of the batter, then the remaining cranberry sauce. sprinkle with walnuts.
  • 4 bake in 350f oven for 1 hour. cool in pan. run knife around edge: remove from pan.
  • 5 pour glaze over cake.
