Cranberry Coffee Cake

Ingredients

- 1/2 cup margarine
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup plain yogurt or 1 cup sour cream
- 1 teaspoon almond extract
- 1 (398 ml) can whole cranberry sauce, pureed
- 1/2 cup walnuts, chopped
- 3/4 cup icing sugar
- 1 tablespoon hot water
- 1/2 teaspoon almond extract
Recipe
- 1 cream margarine, sugar and eggs.
- 2 sift dry ingredients. mix alternately into creamed ingredients the dry ingredients and yogurt. add almond extract; beat well.
- 3 spread 1/2 batter in well-greased tube pan. spread cranberry sauce on top. spread the rest of the batter, then the remaining cranberry sauce. sprinkle with walnuts.
- 4 bake in 350f oven for 1 hour. cool in pan. run knife around edge: remove from pan.
- 5 pour glaze over cake.
