Blueberry Cornbread

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 cup cornmeal
  • 1 1/2 cups sifted flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 1/2 cups milk or 1 1/2 cups non-dairy coffee creamer
  • 2 beaten eggs
  • 1/4 cup melted butter or 1/4 cup margarine
  • 1 cup blueberries

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease a 9 x 9 pan.
  • 3 in a large bowl combine the corn meal, flour, sugar and baking powder.
  • 4 mix to combine and then add the milk, eggs and melted butter and mix well taking care not to over mix.
  • 5 gently fold in the blueberries.
  • 6 pour the batter into the prepared pan and bake for 20 to 25 minutes.
  • 7 you can, if you prefer, make this recipe as muffins.
