Blueberry Cornbread

Ingredients

- 1 cup cornmeal
- 1 1/2 cups sifted flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1 1/2 cups milk or 1 1/2 cups non-dairy coffee creamer
- 2 beaten eggs
- 1/4 cup melted butter or 1/4 cup margarine
- 1 cup blueberries
Recipe
- 1 preheat oven to 350 degrees.
- 2 grease a 9 x 9 pan.
- 3 in a large bowl combine the corn meal, flour, sugar and baking powder.
- 4 mix to combine and then add the milk, eggs and melted butter and mix well taking care not to over mix.
- 5 gently fold in the blueberries.
- 6 pour the batter into the prepared pan and bake for 20 to 25 minutes.
- 7 you can, if you prefer, make this recipe as muffins.
