Lemon Basil Oil

Ingredients

  • 2 tablespoons lemons, zest of
  • 15 fresh basil leaves
  • 1 cup canola oil or 1 cup olive oil

Recipe

  • 1 combine ingredients in a glass measuring cup.
  • 2 set the cup on a pie plate in the middle of the oven.
  • 3 heat oven to 300 degrees and leave oil for 1 hour and 40 minutes, checking temperature occasionally with a candy thermometer.
  • 4 when done (temperature should be 250 degrees f), remove to rack to cool.
  • 5 line a small strainer with a coffee filter that is moistened with a small amount of oil.
  • 6 strain the oil through the filter into a hot, clean glass container.
  • 7 cover and store in refrigerator for up to one month.
