Individual Brownie Alaskas

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 2
  • 2 brownies (3x3")
  • 1/4 pint vanilla ice cream or 1/4 pint coffee ice cream or 1/4 pint peppermint ice cream
  • 1 egg
  • 2 tablespoons sugar

Recipe

  • 1 place brownies on ungreased baking sheet.
  • 2 top each with a scoop or slice of ice cream; place in freezer while preparing meringue (ice cream must be very hard before covering with meringue).
  • 3 heat oven to 450ºf.
  • 4 beat egg until foamy, and beat in sugar gradually; continue beating until stiff and glossy (do not underbeat).
  • 5 quickly spread meringue on ice cream and sides of brownies, being careful to seal meringue to baking sheet; bake until light brown (about 3 minutes).
  • 6 place in freezer (up to 24 hours) or serve immediately.
