Fresh Apple Coffee Cake With Essence Of Orange And Cranberries

Ingredients

  • Servings: 6
  • 3 cups apples (shredded with peel)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon clove
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/2 cup orange juice
  • 1/2 cup egg substitute
  • 1/2 cup nonfat sour cream
  • 1 cup sugar
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 2 teaspoons vanilla
  • 1/2 cup dried cranberries

Recipe

  • 1 preheat oven to 350 degrees fahrenheit.
  • 2 spray a bundt pan with cooking spray and set aside.
  • 3 mix apples, spices, orange juice, egg substitute, and sour cream.
  • 4 stir in sugar and set aside.
  • 5 sift together flour, salt, and baking powder.
  • 6 stir dry ingredients into wet until just moistened. stir in vanilla.
  • 7 fold in dried cranberries.
  • 8 pour into prepared bundt pan.
  • 9 bake at 350 degrees fahrenheit for 1 hour or until toothpick comes out clean.
  • 10 note: this is a very moist cake so you may need to cook longer, depending on oven.
