Eggnog Coffee Cake

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1 cup butter, room temperature
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup eggnog
  • 1 1/2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups pecans, broken
  • 1/4 cup sugar
  • 1 tablespoon cinnamon

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 butter 9 inch fluted or plain tube pan.
  • 3 in large bowl of electric mixer, cream butter and sugar until light and fluffy.
  • 4 beat in eggs, eggnog, and vanilla.
  • 5 stir together flour, bakng powder, and salt.
  • 6 gradually beat into butter mixture.
  • 7 prepare topping by combining nuts, sugar and cinnamon.
  • 8 scatter half the topping evenly over bottom of pan.
  • 9 spoon in half batter.
  • 10 add remaining topping and spoon on remaining batter.
  • 11 bake 50 to 60 minute, or until toothpick inserted in center comes out clean.
  • 12 cool 15 minutes before removing from pan.
