Eggnog Coffee Cake

Ingredients

- 1 cup butter, room temperature
- 1 1/4 cups sugar
- 2 eggs
- 1 cup eggnog
- 1 1/2 teaspoons vanilla extract
- 2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups pecans, broken
- 1/4 cup sugar
- 1 tablespoon cinnamon
Recipe
- 1 preheat oven to 350 degrees f.
- 2 butter 9 inch fluted or plain tube pan.
- 3 in large bowl of electric mixer, cream butter and sugar until light and fluffy.
- 4 beat in eggs, eggnog, and vanilla.
- 5 stir together flour, bakng powder, and salt.
- 6 gradually beat into butter mixture.
- 7 prepare topping by combining nuts, sugar and cinnamon.
- 8 scatter half the topping evenly over bottom of pan.
- 9 spoon in half batter.
- 10 add remaining topping and spoon on remaining batter.
- 11 bake 50 to 60 minute, or until toothpick inserted in center comes out clean.
- 12 cool 15 minutes before removing from pan.
