Delicious Blueberry Coffee Cake With Crumb Topping

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 2 cups fresh blueberries
  • 3/4 cup milk
  • 5 tablespoons butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5 tablespoons butter, softened
  • 3/4 cup sugar
  • 3/4 cup flour
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt (unless you're using salted butter)

Recipe

  • 1 grease a 9x13 inch baking pan and preheat oven to 350 degrees.
  • 2 whisk together flour, baking powder, and salt.
  • 3 in another bowl, cream butter and sugar together.
  • 4 add egg and vanilla to the creamed butter mixture. mix until combined.
  • 5 add the flour mixture and milk; mix until formed into a batter.
  • 6 gently fold in the blueberries, being careful not to mash them.
  • 7 in a seperate bowl, add all topping ingredients and mix together with your hands (or using two forks) until mixture is crumbly.
  • 8 pour batter into baking pan. sprinkle crumb mixture evenly over the top.
  • 9 bake for 40 minutes.
  • 10 sprinkle top of cake with a little sugar.
  • 11 serve warm & enjoy!
