Delicious Blueberry Coffee Cake With Crumb Topping

Ingredients

- 2 cups fresh blueberries
- 3/4 cup milk
- 5 tablespoons butter, softened
- 1 egg
- 1/2 teaspoon vanilla
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 5 tablespoons butter, softened
- 3/4 cup sugar
- 3/4 cup flour
- 3/4 teaspoon cinnamon
- 1/4 teaspoon salt (unless you're using salted butter)
Recipe
- 1 grease a 9x13 inch baking pan and preheat oven to 350 degrees.
- 2 whisk together flour, baking powder, and salt.
- 3 in another bowl, cream butter and sugar together.
- 4 add egg and vanilla to the creamed butter mixture. mix until combined.
- 5 add the flour mixture and milk; mix until formed into a batter.
- 6 gently fold in the blueberries, being careful not to mash them.
- 7 in a seperate bowl, add all topping ingredients and mix together with your hands (or using two forks) until mixture is crumbly.
- 8 pour batter into baking pan. sprinkle crumb mixture evenly over the top.
- 9 bake for 40 minutes.
- 10 sprinkle top of cake with a little sugar.
- 11 serve warm & enjoy!
