- 1 (18 ounce) box yellow cake mix
- 1 (21 ounce) can apple pie filling
- 3 eggs
- 2 teaspoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon apple pie spice

- 1 combine the streusel mixture in a med. size bowl, and with 2 knifes or your hands combine until you have nice medium-size clumps. (streusel). set aside.
- 2 combine the cake ingredients in a mixing bowl and stir well with a fork until combined (i cut up the apples in the can with a knife to make smaller chunks).
- 3 pour into a greased 9x13 pan and bake at 350f for 15 minutes.
- 4 remove from oven and cover top with the streusel mixture.
- 5 return to bake for 30 more minutes.

- 1 lb cranberries
- 4 cups superfine sugar, divided
- 1 cup water
- 3 cups 80 proof vodka

- 1 combine cranberries with 2 cups sugar.
- 2 add water and boil 4-5 minutes until skins start to pop.
- 3 remove from heat and cool.
- 4 put in a mixing jar, add vodka and shake vigorously.
- 5 cover and leave to infuse at least 7 days, shaking or stirring occasionally.
- 6 pour thru a coarse strainer and discard berries.
- 7 let rest 3-4 days.
- 8 without shaking the jar, decant only the clear liquor into another jar, leaving residue in the original jar.
- 9 the residue can be put thru a paper strainer (i use an unbleached coffee filter) until liquid is clear; add the strained liquor to the already decanted liqueur.
- 10 combine liqueur with 2 more cups of sugar and shake vigorously until sugar is absorbed.
- 11 let clear overnight and bottle.

- 1 (1/4 ounce) envelope unflavored gelatin
- 3 (3 ounce) envelopes dream whip, mix
- 4 ounces cream cheese, fat free

- 24 ladyfingers
- 1/2 cup cold espresso (or strong coffee)
- 1/4 cup kalua coffee liqueur
- 2 teaspoons cocoa powder

- 1 measure 1 cup of milk, remove 1/4 cup, and set the rest aside. in a medium bowl, combine the 1/4 cup of milk with the gelatin. let the mixture sit for 5-10 minutes, then microwave on half power for 1 1/2 minutes, or until the gelatin dissolves. set this mixture aside to cool for 5 minutes.
- 2 in another medium bowl, beat together the softened cream cheese, and the sugar. add the gelatin/ milk mixture and beat until smooth.
- 3 pour the remaining milk into a large mixing bowl. add one envelope of dream whip at a time to the milk and beat after each addition for about 2 minutes until the mixture is light and fluffy.
- 4 while beating the dream whip on high speed, add 1/3 of the cream cheese mixture at a time. mix about 1 minute or until it is well blended and smooth. set aside while preparing the lady fingers.
- 5 combine the espresso and kahlua in a large, shallow bowl. one by one, quickly dip each ladyfinger in the espresso.
- 6 to assemble the tiramisu, arrange half of the soaked ladyfingers side by side in a 8x8 baking dish. cover the fingers with half of the cream cheese mixture nd spread carefully with a rubber spatula until smooth and flat. arrange the remaining ladyfingers on the cheese mixture the same way as the first layer. cover the cake with the remaining cream cheese mixture.
- 7 dust the top of the tiramisu with cocoa powder. cover and chill for approximately 3 hours.

- 2 grease layer pan 9x 1 1/2 inches.

- 6 beat vigorously 1/2 minute.

- 8 spoon jelly or jam onto batter and spread thinly

- 1 combine all of the ingredients in a pitcher or covered container.
- 2 stir or shake until sugar is dissolved.
- 3 chill and serve cold.
- 4 to make the"mocha" variety:add a pinch (1/16 teaspoon) of cocoa powder to the mixture before combining.
- 5 to fake espresso with a drip coffee maker and standard grind of coffee: use 1/3 cup ground coffee and 1 cup of water.
- 6 brew once then run coffee through machine again, same grounds.
- 7 makes about 1/2 cup fresh espresso to use in the above recipe.
- 8 run a pot of water through machine, without grounds, to clean.
