Mississippi Mud Cake

Ingredients

  • Servings: 16
  • 1 3/4 cups strong coffee
  • 1/4 cup dark rum
  • 5 (1 ounce) unsweetened chocolate squares
  • 1 cup butter
  • 2 eggs
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt

Recipe

  • 1 place coffee and rum in a sauce opan and heat to a simmer.
  • 2 add chocolate and butter.
  • 3 cook, stirring occasionally, until both are melted.
  • 4 remove from the heat.
  • 5 in a large bowl, beat eggs.
  • 6 gradually beat in sugar until mixture is thick.
  • 7 beat in vanilla and chocolate mixture.
  • 8 in another bowl, stir together flour, baking soda, and satt.
  • 9 beat into chocolate mixture.
  • 10 turn batter into a greased and floured tube pan.
  • 11 bake at 275°f for 1 1/2 hours, or until cake tests done.
