Mississippi Mud Cake

Ingredients

- 1 3/4 cups strong coffee
- 1/4 cup dark rum
- 5 (1 ounce) unsweetened chocolate squares
- 1 cup butter
- 2 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
Recipe
- 1 place coffee and rum in a sauce opan and heat to a simmer.
- 2 add chocolate and butter.
- 3 cook, stirring occasionally, until both are melted.
- 4 remove from the heat.
- 5 in a large bowl, beat eggs.
- 6 gradually beat in sugar until mixture is thick.
- 7 beat in vanilla and chocolate mixture.
- 8 in another bowl, stir together flour, baking soda, and satt.
- 9 beat into chocolate mixture.
- 10 turn batter into a greased and floured tube pan.
- 11 bake at 275°f for 1 1/2 hours, or until cake tests done.
