Millet Muffins With Honey Pecan Butter

Ingredients
- 2/3 cup millet
- 3/4 cup brown sugar
- 1 egg
- 1 cup buttermilk
- 1/4 cup melted butter
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons butter, softened
- 2 tablespoons finely chopped toasted pecans
- 1 tablespoon honey
Recipe
- 1 preheat oven to 375 degrees. coarsely grind millet in food processor or coffee grinder; set aside. add brown sugar and egg to a large bowl. whisk until well combined. stir in millet, milk, and butter.
- 2 in another bowl, combine flour, baking powder, baking soda, and salt. make a well in the center and add the wet ingredients. stir just until moistened.
- 3 spoon into muffin tins coated with cooking spray. bake for 18 minutes or until lightly browned.
- 4 combine the butter, pecans, and honey in a small bowl. serve with the muffins.
