Millet Muffins With Honey Pecan Butter

Ingredients

  • 2/3 cup millet
  • 3/4 cup brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup melted butter
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons butter, softened
  • 2 tablespoons finely chopped toasted pecans
  • 1 tablespoon honey

Recipe

  • 1 preheat oven to 375 degrees. coarsely grind millet in food processor or coffee grinder; set aside. add brown sugar and egg to a large bowl. whisk until well combined. stir in millet, milk, and butter.
  • 2 in another bowl, combine flour, baking powder, baking soda, and salt. make a well in the center and add the wet ingredients. stir just until moistened.
  • 3 spoon into muffin tins coated with cooking spray. bake for 18 minutes or until lightly browned.
  • 4 combine the butter, pecans, and honey in a small bowl. serve with the muffins.
