Mississippi Mud Pie With Caramel Candy
Ingredients
- 1/4 cup butter, melted
- 1/3 cup powdered sugar
- 1 1/2 cups chocolate wafers, crushed
- 3 cups coffee ice cream
- 10 pieces caramel candies
- 1 tablespoon milk
- 1/4 cup butter or 1/4 cup margarine
- 1/4 cup milk
- 1/2 cup sugar
- 3/4 cup chocolate chips
Recipe
- 1 combine crust ingredients and press gently into a 9-inch pie plate.
- 2 microwave on medium-high 1 1/2 to 2 minutes.
- 3 cool.
- 4 for filling: soften ice cream for 1 minute on low or until it can be spooned into crumb crust. freeze until ice cream is once again solid.
- 5 place caramels in 1 tablespoon milk in 1 cup measure. microwave, uncovered, on high for 30 seconds to 1 minute. stir until smooth and completely melted.
- 6 cool.
- 7 pour over frozen ice cream and return to freezer.
- 8 place butter, 1/4 cup milk and sugar in bowl and microwave on high 1 to 2 minutes or until mixture comes to a full boil.
- 9 stir well.
- 10 boil an additional 2 1/2 minutes.
- 11 cool slightly.
- 12 add chocolate chips and beat until mixture just starts to thicken.
- 13 pour over ice cream and return to freezer until 1/2 hour before serving.
- 14 one-half hour before serving, place pie in refrigerator to defrost slightly.
