Mississippi Mud Pie With Caramel Candy

Ingredients

  • 1/4 cup butter, melted
  • 1/3 cup powdered sugar
  • 1 1/2 cups chocolate wafers, crushed
  • 3 cups coffee ice cream
  • 10 pieces caramel candies
  • 1 tablespoon milk
  • 1/4 cup butter or 1/4 cup margarine
  • 1/4 cup milk
  • 1/2 cup sugar
  • 3/4 cup chocolate chips

Recipe

  • 1 combine crust ingredients and press gently into a 9-inch pie plate.
  • 2 microwave on medium-high 1 1/2 to 2 minutes.
  • 3 cool.
  • 4 for filling: soften ice cream for 1 minute on low or until it can be spooned into crumb crust. freeze until ice cream is once again solid.
  • 5 place caramels in 1 tablespoon milk in 1 cup measure. microwave, uncovered, on high for 30 seconds to 1 minute. stir until smooth and completely melted.
  • 6 cool.
  • 7 pour over frozen ice cream and return to freezer.
  • 8 place butter, 1/4 cup milk and sugar in bowl and microwave on high 1 to 2 minutes or until mixture comes to a full boil.
  • 9 stir well.
  • 10 boil an additional 2 1/2 minutes.
  • 11 cool slightly.
  • 12 add chocolate chips and beat until mixture just starts to thicken.
  • 13 pour over ice cream and return to freezer until 1/2 hour before serving.
  • 14 one-half hour before serving, place pie in refrigerator to defrost slightly.
