Mocha Truffle Cookies

Ingredients

• 1 1/2 cups chocolate chips
• 1/2 cup butter
• 3/4 cup sugar
• 1 tablespoon instant coffee crystals
• 2 eggs
• 3/4 cup packed brown sugar
• 2 cups flour
• 2 teaspoons vanilla
• 1/2 teaspoon baking powder
• 1/3 cup cocoa
• 1/4 teaspoon salt

Recipe

• 1 preheat oven to 350.
• 2 in a large saucepan, melt butter and 1/2 cup chocolate chips over low heat. remove from heat.
• 3 stir in coffee, cool 5 minutes.stir in sugars, eggs and vanilla.
• 4 in a medium mixing bowl combine flour, cocoa, baking powder and salt. stir into coffee mixture.
• 5 stir in the 1 cup chocolate chips.
• 6 drop dough by rounded tablesppons onto lightly greased cookie sheets.
• 7 bake for 10 minutes, let cool one minute before removing from sheets.
