Mississippi Mud Cake

Ingredients
- butter, and
- flour, for the pan
- 3/4 cup coffee
- 1/4 lb butter
- 3 ounces unsweetened chocolate, chopped
- 1 egg
- 1/3 cup bourbon
- 1 teaspoon vanilla extract
- 1 cup cake flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1 pinch salt
- 3/4 cup chopped pecans
- 1/2 cup raisins
- whipped cream (to garnish)
Recipe
- 1 preheat oven to 275.
- 2 grease and flour a 9x4 loaf pan.
- 3 mix coffee, butter, chocolate in a bowl and microwave until chocolate is melted 1-2 minutes.
- 4 cool.
- 5 beat the egg.
- 6 stir in bourbon and vanilla.
- 7 add to chocolate mixture, stirring.
- 8 in a medium bowl sift flour, sugar, baking soda, salt.
- 9 beat into chocolate mixture until smooth.
- 10 stir in pecans and raisins.
- 11 pour into loaf pan.
- 12 bake 45-55 minutes.
- 13 remove and cool in pan on wire rack for 20 minutes.
- 14 remove from pan and cool completely.
- 15 serve with whipped cream.
