Mississippi Mud Cake

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • butter, and
  • flour, for the pan
  • 3/4 cup coffee
  • 1/4 lb butter
  • 3 ounces unsweetened chocolate, chopped
  • 1 egg
  • 1/3 cup bourbon
  • 1 teaspoon vanilla extract
  • 1 cup cake flour
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup chopped pecans
  • 1/2 cup raisins
  • whipped cream (to garnish)

Recipe

  • 1 preheat oven to 275.
  • 2 grease and flour a 9x4 loaf pan.
  • 3 mix coffee, butter, chocolate in a bowl and microwave until chocolate is melted 1-2 minutes.
  • 4 cool.
  • 5 beat the egg.
  • 6 stir in bourbon and vanilla.
  • 7 add to chocolate mixture, stirring.
  • 8 in a medium bowl sift flour, sugar, baking soda, salt.
  • 9 beat into chocolate mixture until smooth.
  • 10 stir in pecans and raisins.
  • 11 pour into loaf pan.
  • 12 bake 45-55 minutes.
  • 13 remove and cool in pan on wire rack for 20 minutes.
  • 14 remove from pan and cool completely.
  • 15 serve with whipped cream.
