Mississippi Fudge Cake

Ingredients

  • 4 eggs
  • 1 1/2 cups butter or 1 1/2 cups margarine, divided
  • 2 cups sugar
  • 1 1/2 cups flour
  • 2/3 cup cocoa, divided
  • 1 dash salt
  • 1 cup pecans, chopped
  • 2 teaspoons vanilla, chopped
  • miniature marshmallow
  • 1 lb powdered sugar
  • 6 -8 tablespoons milk
  • 1 teaspoon powdered instant coffee

Recipe

  • 1 cake:
  • 2 melt 2 sticks butter and 1/3 cup cocoa together. in large bowl, beat together eggs, 2 cups sugar, flour and salt. add butter/cocoa mixture to bowl, add nuts and vanilla. bake in greased 9x13 pan about 40 minutes at 350°f remove from oven and cover with miniature marshmallows while cake is still hot. let cool before adding icing.
  • 3 icing:.
  • 4 sift 1/3 cup cocoa, coffee and powdered sugar. add 1 stick melted butter, milk and 1 teaspoons vanilla - beat well and spread over cake.
