Dot's Madeira Cake

Ingredients
- 6 ounces butter
- 6 ounces sugar
- 3 eggs
- 6 ounces cornflour
- 2 teaspoons baking powder
Recipe
- 1 cream together the butter & sugar until light and fluffy with an electric mixer.
- 2 add eggs and cornflour and beat for 6 minutes on medium speed.
- 3 fold in the baking powder.
- 4 pour into a greased & lined reasonably deep 8" tin.
- 5 bake for 50-60 minutes at 350'f.
- 6 remove from oven when a cake tester comes out clean.
- 7 stand for 10 minutes before removing from tin.
- 8 enjoy with a nice cup of tea or coffee.
- 9 optional: a larger cake can be made by increasing butter, sugar and cornflour to 9oz each and bake in a 10" tin.
