Honey Cake

Ingredients

  • 1 3/4 cups honey
  • 1 cup strong coffee
  • 1/2 cup currants or 1/2 cup raisins
  • 3 tablespoons brandy
  • 1/4 cup applesauce
  • 1 1/4 cups brown sugar, packed
  • 1 cup egg substitute
  • 3 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ginger
  • 1 tablespoon orange zest, grated

Recipe

  • 1 in a saucepan, combine the honey and coffee, bring to a boil and cool.
  • 2 soak currants in brandy.
  • 3 preheat the oven to 350 degrees.
